Mushroom Pâté Preparation

Sauté the Mushrooms

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the chopped mushrooms and cook for about 5-7 minutes until they release their moisture and start to brown.

Blend the Pâté

Transfer the sautéed mushrooms to a food processor. Add soy sauce, nutritional yeast, salt, and pepper. Blend until smooth and set aside.

Pickling the Vegetables

Prepare the Pickling Brine

In a bowl, whisk together rice vinegar, sugar, and salt until dissolved.

Pickle the Vegetables

Add julienned carrots and daikon to the brine. Let it sit for at least 30 minutes or refrigerate overnight for best flavor.

Assembling the Bahn Mi

Prepare the Creamy Sriracha

In a small bowl, mix vegan mayonnaise and sriracha. Adjust the amount of sriracha to taste.

Assemble the Sandwich

Slice the hoagie rolls open. Spread a generous amount of mushroom pâté on each side. Layer with sliced seitan, pickled vegetables, cucumber slices, cilantro leaves, and drizzle with creamy sriracha.
