Prepare the Bread & Butter

Slice the Red Hen bread and serve with softened butter.

Green Salad

Make the Salad

In a large bowl, combine mixed greens, diced apples, blue cheese, and maple toasted nuts. Drizzle with cider vinaigrette and toss gently.

Roast Chicken

Roast the Chicken

Preheat the oven to 375°F (190°C). Season the chicken with salt, pepper, and herbs. Place in a roasting pan with fingerling potatoes and cauliflower. Roast for 1.5 hours or until the chicken is cooked through.

Pork Loin

Prepare the Pork

Season the pork loin with salt and pepper. Sear in a hot skillet, then transfer to the oven to roast for 1 hour. Serve with maple mustarda and roasted Brussels sprouts.

Scallion Biscuits

Make the Biscuits

Preheat the oven to 400°F (200°C). In a bowl, mix flour and baking powder. Cut in butter until crumbly. Stir in scallions and milk. Roll out and cut into biscuits and bake for 15 minutes.

Chèvre Gnocchi

Combine chèvre, mashed potatoes, and flour to form a dough. Roll into ropes, cut into pieces, and cook in boiling water until they float. Serve with mushroom ragout and roasted squash.
