Method
Preparing the Fish
Preheat and Prepare
Preheat your oven to 400°F (200°C). Clean the whole barramundi and pat it dry with paper towels.
Season the Fish
Rub the fish with olive oil, salt, and black pepper, ensuring the seasoning is evenly distributed.
Bake the Fish
Place the fish on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the fish flakes easily with a fork.
Making the Heirloom Bean Salad
Cook the Beans
Rinse the heirloom beans and soak them overnight. Cook the beans in boiling water until tender, about 45-60 minutes. Drain and let cool.
Combine Ingredients
In a large bowl, combine the cooked beans, red onion, cherry tomatoes, cucumber, and parsley.
Dress the Salad
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.
Making the Gremolata
Prepare Gremolata
In a small bowl, mix together the minced garlic, lemon zest, and chopped parsley. Set aside.
Serving
Plate the Dish
Serve the baked barramundi on a platter, accompanied by the heirloom bean salad, and top with the gremolata.
