Preparation Steps
Prepare the Beans
In a large pot, cover the heirloom beans with water and soak overnight. The next day, drain and rinse the beans. Cook them in fresh water until tender, approximately 1 to 1.5 hours. Drain and let cool.
Chop the Vegetables
While the beans are cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion and parsley.
Make the Dressing
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.
Combine Salad Ingredients
In a large bowl, combine the cooked heirloom beans, cherry tomatoes, cucumber, red onion, and parsley. Pour the dressing over the salad and toss gently to combine.
Serve
Allow the salad to rest for 15 minutes before serving to let the flavors meld. Serve chilled or at room temperature.
