Method

Preparing Home Fries

  1. 1

    Cook the Potatoes

Heat olive oil in a skillet over medium heat. Add diced potatoes and onion. Season with paprika and salt. Cook until golden brown and crispy, about 15 minutes, stirring occasionally.

Making the Omelet

  1. 2

    Whisk the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until fully combined.

  2. 3

    Cook the Omelet

In a non-stick skillet, melt a little butter over medium heat. Pour the egg mixture into the skillet. As the eggs begin to set, gently lift the edges with a spatula to allow uncooked eggs to flow underneath.

  3. 4

    Add Fillings

Once the omelet is nearly set, sprinkle shredded Vermont cheddar, piquillo peppers, and any optional add-ons you desire over one half of the omelet.

  4. 5

    Fold and Serve

Carefully fold the omelet in half over the fillings and cook for another minute. Slide onto a plate.

Toast Preparation

  1. 6

    Toast the Bread

While the omelet is cooking, toast the bread slices. Spread with butter once toasted.
