Preparation of Gin Aioli

    Make the Gin Aioli

    In a bowl, mix the mayonnaise, gin, anchovy paste, and lemon juice until smooth. Season with salt and pepper to taste. Set aside.

Cooking the Striped Bass

    Cook the Fish

    Preheat a skillet over medium heat. Season the striped bass fillets with salt and pepper. Add a drizzle of oil to the skillet and place the fillets skin-side down. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Plating

    Plate the Dish

    On a plate, arrange the endive leaves. Place the cooked striped bass fillet on top, drizzle with gin aioli, and sprinkle dill pollen over the top for garnish.
