Prepare Home Fries

    Cook Potatoes

    Dice the potatoes into small cubes. Heat olive oil in a skillet over medium heat. Add the potatoes, salt, and pepper. Cook until golden brown and crispy, about 15-20 minutes, stirring occasionally.

Prepare Brisket Hash

    Combine Ingredients

    In the skillet with the home fries, add smoked brisket, piquillo peppers, and caramelized onions. Stir to combine and heat through for about 5-7 minutes.

Poach Eggs

    Prepare Poaching Liquid

    In a saucepan, bring water and vinegar to a gentle simmer. Crack each egg into a small bowl and gently slide into the simmering water. Poach for 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon.

Make Hollandaise Sauce

    Blend Ingredients

    In a double boiler, whisk together egg yolks and lemon juice until thickened. Gradually whisk in melted butter until smooth and creamy. Season with salt to taste.

Assemble Dish
