Prepare the Ingredients

Wash and scrub the new potatoes, then cut them into halves or quarters depending on their size. Peel the baby onions and set aside. Rinse the shrimp and pat dry.

Cook the Potatoes

In a large pot, add the vegetable broth and bring to a boil. Add the potatoes and cook for about 10-12 minutes or until they are fork-tender.

Make the Curry Broth

Once the potatoes are cooked, stir in the red curry paste and cook for 2 minutes until fragrant. Then add the coconut milk and fish sauce, stirring to combine.

Add Shrimp and Onions

Add the baby onions and the shrimp to the pot. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Finish and Serve

Stir in the lime juice and season with salt and black pepper to taste. Garnish with fresh cilantro before serving.
