Oatmeal Cookies

Method

Assembly

  1. 1

    Prepare the Cookies

Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.

  2. 2

    Mix in the Eggs

Beat in the eggs one at a time, then stir in the vanilla extract.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.

  4. 4

    Add Oats

Fold in the rolled oats until evenly distributed.

  5. 5

    Bake the Cookies

Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.

  6. 6

    Cool the Cookies

Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

  7. 7

    Make the Cream Filling

In a medium bowl, beat together 1 cup of softened butter, 2 cups of powdered sugar, and 1 tsp of vanilla extract until creamy and smooth.

  8. 8

    Assemble the Pies

Spread a generous layer of cream filling on the flat side of one cookie, and top it with another cookie, flat side down. Repeat with remaining cookies.
