Prepare the Mushroom Ragout

    Sauté the Aromatics

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for another minute.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet. Sprinkle with thyme, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.

Cook the Eggs

    Prepare the Eggs

    In a separate pan, cook the eggs to your preferred style (fried, poached, or scrambled). Season with salt and pepper.

Assemble the Tartine

    Toast the Bread

    Lightly toast the slices of Red Hen bread until golden brown.

    Layer the Ingredients

    Place a generous amount of mushroom ragout on each slice of toast. Top with the cooked eggs and finish with slices of raclette cheese.

    Melt the Cheese

    Optionally, place the assembled tartines under a broiler for 1-2 minutes to melt the cheese.
