Macaron Shells

Buttercream Filling

Method

Prepare the Macaron Shells

  1. 1

    Sift Dry Ingredients

In a bowl, sift together almond flour and powdered sugar until well combined and free of lumps.

  2. 2

    Whip Egg Whites

In a clean mixing bowl, whip egg whites until frothy. Gradually add granulated sugar and continue to whip until stiff peaks form.

  3. 3

    Combine Mixtures

Gently fold the sifted dry ingredients into the whipped egg whites using a spatula. If desired, add food coloring and mix until incorporated.

  4. 4

    Pipe Shells

Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles onto a parchment-lined baking sheet.

  5. 5

    Rest the Shells

Let the piped macarons rest at room temperature for 30-60 minutes until a skin forms on the surface.

  6. 6

    Bake

Preheat the oven to 300°F (150°C). Bake for 15-20 minutes, rotating the sheet halfway through, until the macarons are firm to touch.

Prepare the Buttercream Filling

  1. 7

    Cream Butter

In a mixing bowl, beat the unsalted butter until creamy and smooth.

  2. 8

    Add Powdered Sugar

Gradually add the powdered sugar, mixing until fully incorporated and fluffy.

  3. 9

    Add Cream and Flavoring

Mix in heavy cream and vanilla extract until the buttercream is light and spreadable.

Assemble the Macarons

  1. 10

    Pair Shells

Match the baked macaron shells in pairs according to size.

  2. 11

    Fill

Pipe or spread a generous amount of buttercream on the flat side of one shell and sandwich with its pair.
