Make the Cookie Dough
In a medium bowl, mix together flour, baking soda, and salt. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Gradually blend in the flour mixture. Stir in chocolate chips.

Bake the Cookies
Preheat the oven to 350°F (175°C). Drop spoonfuls of dough onto ungreased baking sheets. Bake for 10-12 minutes or until edges are lightly browned. Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Assemble the Ice Cream Sandwiches
Once the cookies are completely cool, place a scoop of your favorite ice cream between two cookies. Press gently to form a sandwich. Repeat with remaining cookies and ice cream.

Optional Freezing
For a firmer sandwich, wrap each sandwich in plastic wrap and freeze for about 1 hour before serving.
