Make the Goat Cheese Ice Cream Base

In a mixing bowl, combine the chèvre, heavy cream, sweetened condensed milk, and vanilla extract. Whisk until smooth and creamy. Pour into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.

Brownie Preparation

Bake the Brownies

Preheat your oven to 350°F (175°C). In a saucepan, melt the butter and cocoa powder together over low heat. Remove from heat and stir in sugar. Add eggs one at a time, mixing well after each addition. Stir in flour and salt until just combined. Pour into a greased baking pan and bake for 25-30 minutes. Let cool and cut into squares.

Assemble the Sundae

In a serving bowl, layer the goat cheese ice cream, brownie squares, Amarena cherries, a drizzle of dulce de leche, and a handful of toasted nuts. Top with whipped cream and a drizzle of maple syrup. Serve immediately.
