Method

Frying the Rabbit

    Prepare the Rabbit

    Season the rabbit pieces with salt, pepper, and paprika. Dredge in flour, dip in beaten eggs, and coat with breadcrumbs.

    Fry the Rabbit

    In a large skillet, heat vegetable oil over medium-high heat. Fry the rabbit pieces until golden brown and cooked through, about 8-10 minutes per side. Drain on paper towels.

Making the Sunchoke Purée

    Cook the Sunchokes

    Boil the sunchokes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Blend the Purée

    Add butter, cream, salt, and pepper to the sunchokes and blend until smooth. Adjust seasoning as needed.

Preparing the Smoked Créme Fraîche

    Mix the Ingredients

    In a bowl, combine créme fraîche, liquid smoke, and lemon juice. Mix well and refrigerate until ready to use.

Grilling the Radicchio

    Prepare the Radicchio

    Brush the cut sides of radicchio with olive oil and season with salt and pepper.

    Grill the Radicchio

    Preheat a grill or grill pan over medium heat. Grill radicchio cut-side down until charred and slightly wilted, about 5-7 minutes.

Plating

    Serve

    On a plate, spread a layer of sunchoke purée, top with fried rabbit, and serve grilled radicchio on the side. Drizzle with smoked créme fraîche.
