Preparation of Home Fries

    Cook the Potatoes

    Dice the potatoes and boil them in salted water for about 10 minutes until tender. Drain and let cool.

    Fry the Potatoes

    In a skillet, heat some oil over medium heat. Add the boiled potatoes and fry until golden and crispy, about 10-15 minutes. Season with salt and pepper to taste.

Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk the egg yolks with lemon juice over a pot of simmering water until thickened. Gradually whisk in the melted butter until the sauce is smooth. Season with salt and cayenne pepper to taste.

Assemble the Eggs Benedict

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide the eggs into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny.

    Toast the Muffins

    Split and toast the English muffins until golden brown.
