Rabbit Loin

Maple-Candied Bacon

Mustard Greens

Method

Preparing the Rabbit Loin

  1. 1

    Season the Rabbit

Season the rabbit loins with salt and black pepper on all sides.

  2. 2

    Sear the Rabbit

Heat olive oil in a skillet over medium-high heat. Sear the rabbit loins for 3-4 minutes on each side until golden brown and cooked through. Remove and let rest.

Making Maple-Candied Bacon

  1. 3

    Prepare the Bacon

Preheat oven to 375°F (190°C). On a baking sheet lined with parchment paper, lay the bacon slices flat.

  2. 4

    Add Toppings

Mix maple syrup and brown sugar in a small bowl, then brush the mixture over the bacon slices.

  3. 5

    Bake the Bacon

Bake in the preheated oven for 15-20 minutes or until crispy. Remove from oven and let cool.

Cooking the Mustard Greens

  1. 6

    Sauté the Greens

In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

  2. 7

    Add Mustard Greens

Add mustard greens and vegetable broth. Cook for about 5-7 minutes until the greens are wilted and tender.

  3. 8

    Season the Greens

Season with salt and black pepper to taste.

Plating the Dish

  1. 9

    Serve

Slice the rested rabbit loin and serve it on a plate alongside the sautéed mustard greens and top with crispy maple-candied bacon.
