Ingredients for Caramels

Method

Directions for Making Caramels

  1. 1

    Prepare the Pan

Line an 8-inch square baking pan with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment with butter or nonstick spray.

  2. 2

    Combine Ingredients

In a heavy-bottomed saucepan, combine the unsalted butter, granulated sugar, light corn syrup, and sweetened condensed milk. Stir gently to combine.

  3. 3

    Cook the Mixture

Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly. Once boiling, reduce the heat to medium-low and continue cooking, stirring frequently, until the mixture reaches a temperature of 240°F (115°C) on a candy thermometer.

  4. 4

    Add Flavorings

Remove the saucepan from heat and carefully stir in the vanilla extract and sea salt until well combined.

  5. 5

    Pour and Set

Pour the caramel mixture into the prepared baking pan, spreading it evenly. Let it cool at room temperature for several hours or until set.

  6. 6

    Cut into Pieces

Once the caramels are set, use the parchment overhang to lift them out of the pan. Cut into small squares with a sharp knife.

  7. 7

    Wrap and Store

Wrap each caramel in wax paper or cellophane to prevent sticking and store in an airtight container at room temperature.
