Blanching Peas

Prepare the Peas
Bring a pot of salted water to a boil. Add the fresh green peas and blanch for about 2-3 minutes until bright green and tender. Drain and immediately transfer to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Make the Sauce
In a saucepan over medium heat, combine the chopped shallots and white wine. Allow to simmer until reduced by half. Add the heavy cream and continue to simmer for 2-3 minutes.

Incorporate Butter
Reduce the heat to low and whisk in the cold, cubed butter a few pieces at a time, ensuring each piece is fully incorporated before adding the next. Once all the butter is added, stir in the pea flower petals, lemon juice, salt, and white pepper. Keep warm until ready to serve.

Serve the Dish
On a plate, arrange the blanched peas, drizzle with the pea flower beurre blanc, and garnish with poppy seeds. Serve immediately.
