    Prepare the Beef

    Finely chop the beef tenderloin and place it in a mixing bowl. Season with salt and black pepper to taste. Add Dijon mustard and mix well.

    Prepare the Charred Leeks

    Trim the leeks and cut them in half lengthwise. Brush with olive oil and char them on a hot grill or in a pan until they are soft and have grill marks. Set aside.

    Make Crispy Sunchokes

    Thinly slice the sunchokes and fry them in hot oil until golden and crispy. Drain on paper towels and season with salt.

    Assemble the Dish

    On a plate, form a round mold of the seasoned beef mixture. Top with a raw egg yolk in the center. Arrange the charred leeks and crispy sunchokes around the beef tartare.

    Serve

    Drizzle with additional olive oil and serve immediately with toasted bread or crackers.
