Mushroom Ragout Preparation

    Cook the mushrooms

    In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until translucent. Add mixed mushrooms, thyme, salt, and pepper. Cook until the mushrooms are tender and browned.

    Add broth

    Pour in the vegetable broth and let it simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

Charred Zucchini Preparation

    Char the zucchini

    In a separate skillet, heat olive oil over medium-high heat. Add zucchini slices, season with salt and pepper, and cook until charred and tender, about 3-4 minutes per side.

Pie Crust Preparation

    Make the pie crust

    In a bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

    Roll out the crust

    Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface and fit it into a pie dish.

Assemble Pie

    Combine ingredients

    Spread the mushroom ragout evenly over the pie crust. Arrange charred zucchini on top and sprinkle with the chevre cheese blend.

    Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is slightly melted. Let cool slightly before serving.
