Make honey-ginger syrup
Peel and thinly slice the ginger. In a small saucepan combine 0.5 cup water, 0.5 oz honey, and the sliced ginger. Bring to a gentle simmer, stirring so the honey dissolves. Simmer 5 minutes to infuse, then remove from heat and cool to room temperature (about 15–20 minutes). Strain out ginger. You should end up with roughly 3–4 fl oz of syrup. Store chilled and use 0.75 oz per cocktail.

Prepare sugar rim
On a small plate combine 1 tablespoon granulated sugar with 1/2 teaspoon freshly cracked black pepper. Rub a lime wedge around the glass rim and dip the rim into the sugar-pepper mixture to coat. Set the glass aside to dry briefly.

Optional black pepper tincture (quick)
For an aromatic pepper accent: bruise 1 teaspoon cracked black pepper in a small jar, cover with 2 oz 80–100 proof neutral spirit (vodka or shootable rum), let steep 1–2 hours at room temperature, then strain. Use 2 dashes in the cocktail. Alternatively, use 2 dashes of freshly cracked black pepper on top of foam at service.

Dry shake (if using egg white)
If using the 1/2 egg white, add the egg white to a cocktail shaker first (no ice) along with the 2 oz añejo rum, 0.75 oz fresh lime juice, 0.75 oz honey-ginger syrup, 0.5 oz peach liqueur, and 2 dashes Angostura bitters. Dry shake vigorously for 15–20 seconds to build a silky foam.

Shake with ice
Add a large handful of ice to the shaker and shake again hard for 10–15 seconds until the shaker is very cold (if you didn't dry shake because you skipped the egg white, just combine all ingredients with ice and shake 12–15 seconds).

Strain and serve
Double-strain the cocktail into the prepared chilled coupe or rocks glass (if serving on the rocks, fill glass with fresh large ice first).

Finish and garnish
Add 2 dashes of the black pepper tincture (or sprinkle about 1/8 tsp freshly cracked black pepper) on top of the foam or surface. Express a lime peel over the drink and drop it in (or float a thin lime wheel). If you used the sugar-pepper rim, present with that rim showing. Serve immediately.
