1. Chill and temperature

Store the bottle upright in a cool, dark place prior to serving. Ideal serving temperature for Tempranillo is 16–18°C (60–65°F). If the bottle is warmer than this, chill it briefly in the refrigerator for 20–30 minutes and recheck. If too cold, let it sit at room temperature 10–15 minutes before serving.

2. Prepare glassware

Select dry, clean red wine glasses (thin rim, tulip-shaped). Warm glasses slightly with your hands if the wine is cooler than desired so the glass doesn’t shock the wine temperature. Place one glass per expected guest (the recipe lists four).

3. Open the bottle

Use a corkscrew to remove the cork cleanly. Wipe the bottle lip with a clean cloth or napkin to remove any sediment or droplets.

4. Decanting (optional)

If the bottle is older or you want to aerate the wine, gently pour the wine into a decanter in a single steady stream until you see sediment reach the bottle neck. For a young, fruit-forward Tempranillo like Protocolo, decant 30–60 minutes before serving to open aromatics; for older vintages decant cautiously and stop when sediment approaches the neck.

5. Pouring

Pour about 120–150 ml (4–5 oz) per glass to allow space for swirling and smelling. Hold the bottle at the base, pour steadily, and stop when each glass has the desired fill. Wipe any drips from the bottle with a cloth.

6. Tasting and serving

Present the wine to guests, noting the label and vintage. Encourage guests to swirl their glass, inhale the aromas (notes of red fruit, spice, and moderate oak typical of Tempranillo), and take a small sip to assess body and tannin. Allow the wine to breathe in glass; flavours will open over 15–30 minutes. Re-taste and top up glasses as desired.

7. Storage of opened bottle

If there is leftover wine, re-cork the bottle (use original cork or a wine stopper) and store upright in the refrigerator. Consume within 3–5 days for best quality. For slightly longer preservation use an inert gas wine preserver or vacuum pump.
