Cocktail

Method

Prep

  1. 1

    Chill glass

Place a margarita or coupe glass in the freezer for 5–10 minutes to chill while you prepare the cocktail.

  2. 2

    Prepare rim

Rub a lime wedge around the glass rim. Pour the coarse salt or Tajín onto a small plate and press the wet rim into it to coat. For a blue-rim effect, dip the rim briefly in blue sugar or brush a few drops of blue curaçao around the rim before applying salt.

Mixing

  1. 3

Dry shake (if using egg white)

If using egg white for a frothy texture, add 0.5 oz egg white to a cocktail shaker with the tequila, blue curaçao, lime juice, agave syrup, and optional orange liqueur. Seal and shake vigorously without ice for 10–12 seconds to emulsify.

  2. 4

    Shake with ice

Add a generous handful of ice to the shaker (about 4–6 cubes). Shake hard for 12–15 seconds until the shaker is very cold and the exterior frosts.

  3. 5

    Double strain

Double-strain the mixture into the chilled, rimmed glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and egg white solids (if used).

Finish & Serve

  1. 6

Garnish the cocktail with a lime wheel on the rim or floated on the surface. For additional drama, you can float a thin stripe of blue curaçao on top by pouring 1–2 drops down the back of a spoon held just above the drink; it will sink slightly and create a layered blue effect.

  2. 7

Serve immediately. Encourage the guest to stir once or twice to fully integrate any surface layering before drinking.
