    Chill glass

    Place a coupe or martini glass in the freezer for 5–10 minutes, or fill it with ice water while you mix the drink to chill it.

    Juice and measure

    Juice fresh limes until you have 0.75 oz (about half a lime) of fresh lime juice per cocktail. Measure gin and simple syrup.

    Build and shake

    Fill a cocktail shaker with ice (about 3/4 full). Add 2 oz gin, 0.75 oz fresh lime juice, and 0.75 oz simple syrup. Secure the lid and shake vigorously for 10–15 seconds, until the shaker is very cold and a slight frost forms.

    Strain

    Discard the ice or water from the chilled glass. Double-strain the contents of the shaker into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch any pulp or ice shards.

    Garnish and serve

    Garnish with a lime wheel placed on the rim or a lime twist expressed over the drink. Serve immediately.
