    Chill glass

    Place a champagne flute or coupe in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to ensure the glass is well chilled.

    Mix base

    Add the gin, fresh lemon juice, and simple syrup into a cocktail shaker filled about halfway with ice.

    Shake

    Secure the shaker and shake vigorously for 10–12 seconds until the shaker is well chilled and slightly frosted on the outside.

    Strain

    Discard the ice or water from the chilled flute/coupe. Double-strain the shaken mixture into the chilled glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pulp.

    Top with sparkling wine

    Slowly top with the chilled Champagne or dry sparkling wine (about 3 oz). Pour gently down the side of the glass to preserve bubbles.

    Garnish and serve

    Twist a strip of lemon peel over the drink to release the oils, run it around the rim and drop it into the glass (or perch it on the rim). Serve immediately while the cocktail is cold and effervescent.
