Method
Prep & Blend
- 1
Prepare glass
Chill two serving glasses in the freezer for 5–10 minutes while you prepare the cocktail, or fill them with ice water and set aside to chill.
- 2
Combine ingredients
In a blender, add 4 oz white rum, 4 oz cream of coconut, 6 oz pineapple juice, 0.5 oz fresh lime juice, 1 cup fresh or frozen pineapple chunks, and 3 cups crushed ice. If you want extra creaminess, add 1 tablespoon coconut cream. If you prefer a sweeter drink, add up to 0.5 oz simple syrup.
- 3
Blend
Secure the lid and blend on high for 30–60 seconds until the mixture is smooth and slushy with no large ice pieces. Pause and scrape down the sides once if needed. Aim for a thick, pourable frozen consistency.
Serve & Garnish
- 4
- 5
Float (optional)
For a classic visual and flavor contrast, carefully pour 0.5 oz dark rum over the back of a spoon near the surface of each drink to create a float.
- 6
Garnish
Garnish each glass with a pineapple wheel or wedge and a maraschino cherry. If desired, lightly dust the top with a tiny pinch of grated nutmeg or toasted coconut flakes for aroma.
- 7
Serve
Serve immediately with a straw and a short cocktail spoon. Encourage guests to stir if a dark rum float was added before drinking.
