    Clean the Mussels

    Rinse the green mussels under cold running water to remove any sand or debris. Use a brush to scrub the shells if necessary. Discard any mussels that are open and do not close when tapped.

    Chop Aromatics

    Mince the garlic and ginger. Thinly slice the shallots. Chop the cilantro and set aside for garnish.

    Prepare Lime

    Cut the lime in half and juice one half. Reserve the other half for garnish.

    In a large pot, heat the olive oil over medium heat. Add the minced garlic, ginger, and shallots. Sauté until fragrant and the shallots become translucent, about 2-3 minutes.

    Add the cleaned green mussels to the pot. Sprinkle chili flakes, salt, and black pepper over them. Stir to coat the mussels with the aromatics. Pour in the lime juice and cover the pot.

    Allow the mussels to steam for about 5-7 minutes, shaking the pot occasionally. The mussels are done when they have opened up. Discard any mussels that remain closed.
