Method

Preparation

  1. 1

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or grit. Soak them in a bowl of cold water for about 30 minutes to allow them to expel any remaining sand.

  2. 2

    Chop the Garlic and Parsley

Mince the garlic cloves and finely chop the fresh parsley, setting aside a small amount for garnish.

  3. 3

    Prepare the Lemon

Cut the lemon in half. Squeeze the juice from one half into a bowl and set the other half aside for garnish.

Cooking

  1. 4

    Sauté the Garlic

In a large pot, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 5

    Add the Clams

Add the cleaned clams to the pot and stir to coat them with the garlic and oil.

  3. 6

    Pour in the Wine

Pour the dry white wine into the pot. Season with salt and black pepper. If desired, add the red pepper flakes for some heat.

  4. 7

    Cook the Clams

Cover the pot and increase the heat to medium-high. Cook for about 5-7 minutes, or until the clams have opened. Discard any clams that do not open.

  5. 8

    Finish with Parsley and Lemon

Once the clams are cooked, remove the pot from the heat. Stir in the chopped parsley and the squeezed lemon juice.

Serving

  1. 9

    Plate the Clams

Serve the clams hot in shallow bowls, garnished with the reserved parsley and lemon halves. If desired, serve with crusty bread for dipping in the broth.
