    Prepare the Calamari

    Rinse the calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.

    Set Up Breading Station

    In one bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together the eggs and milk until well combined.

Frying

    Heat the Oil

    In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Breading the Calamari

    Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat in the flour mixture, pressing lightly to adhere. Repeat until all rings are coated.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in small batches, making sure not to overcrowd the pan. Fry for 2-3 minutes or until golden brown, turning occasionally for even cooking.

    Drain and Cool

    Using a slotted spoon, remove the fried calamari and place them on a plate lined with paper towels to drain excess oil. Repeat until all calamari are fried.
