    Wash and peel the Russet potatoes. Cut them into thin strips or sticks, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a deep-frying thermometer to check the temperature.

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This will help them become crispy when fried.

    Carefully add a batch of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil.
