Mix Dry Ingredients
In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt. Stir well to ensure all dry ingredients are evenly mixed.

In another bowl, whisk together the buttermilk, egg, and finely chopped onion until well combined.

Combine Mixtures
Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Heat Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; it should sizzle and rise to the surface.

Fry Hushpuppies
Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until they are golden brown.

Drain Excess Oil
Once cooked, use a slotted spoon to remove the hushpuppies from the oil and transfer them to a plate lined with paper towels to drain any excess oil.

Serve the hushpuppies warm, with your favorite dipping sauce or alongside fried fish or shrimp.
