Crawfish Preparation

Boiling Ingredients

Method

Crawfish Preparation

  1. 1

    Cleaning the Crawfish

Fill a large container with water and add the salt. Stir to dissolve the salt. Add the live crawfish to the container and let them soak for about 30 minutes. This helps to clean them and purge any mud.

  2. 2

    Rinsing the Crawfish

After soaking, drain the crawfish and rinse them thoroughly under cold running water. Make sure to remove any debris or dead crawfish.

  3. 3

    Preparing the Seasoning

Slice the lemons in half and set aside. In a bowl, combine the Cajun seasoning with a little water to create a paste, if desired.

Boiling Directions

  1. 4

    Boil Water

In a large pot, bring 10 gallons of water to a rolling boil. Add the Cajun seasoning and the prepared lemon halves to the boiling water.

  2. 5

    Add Aromatics

Once the water is boiling, add the whole garlic cloves, whole onions (peeled and quartered), and bay leaves to the pot.

  3. 6

    Add Potatoes and Sausage

After 5 minutes, add the potatoes and sausage to the boiling pot. Let them cook for about 15 minutes.

  4. 7

    Add Corn and Crawfish

After 15 minutes, add the corn on the cob and the cleaned crawfish to the pot. Stir gently to ensure everything is coated in the seasoning.

  5. 8

    Final Cooking

Cover the pot and let it boil for an additional 5-7 minutes until the crawfish are bright red and cooked through.

  6. 9

    Resting

Turn off the heat and let the pot sit covered for another 15 minutes for the flavors to meld.

  7. 10

    Serving

Carefully drain the pot and spread the crawfish, potatoes, corn, and sausage on a newspaper-covered table for serving. Enjoy!
