    Place the cut potato sticks in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and ensures the fries are crispy.

    Mix the Seasoning

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Mix well to create a uniform seasoning blend.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of potato; if it sizzles, the oil is ready.

    Drain the soaked potatoes and pat them dry with paper towels to remove excess water. Carefully add a handful of potato sticks to the hot oil, being cautious not to overcrowd the pan. Fry for about 4-5 minutes, or until golden brown and crispy.
