    Clean the mussels

    Rinse the black mussels under cold running water, scrubbing the shells with a brush to remove any dirt or barnacles. Remove the beards by pulling them away from the shell.

    Chop the aromatics

    Finely chop the garlic cloves and shallots. Roughly chop the fresh parsley, setting aside a small amount for garnish.

    Prepare the lemon

    Cut the lemon in half and squeeze the juice into a small bowl, discarding any seeds.

Cooking

    Sauté the aromatics

    In a large pot, heat olive oil over medium heat. Add the chopped garlic and shallots, sautéing until they are translucent and fragrant, about 3-4 minutes.

    Add the mussels and wine

    Add the cleaned black mussels to the pot, followed by the white wine. Sprinkle salt and black pepper over the mussels.

    Steam the mussels

    Cover the pot with a lid and allow the mussels to steam for about 5-7 minutes or until all the mussels have opened. Discard any mussels that remain closed.

    Finish with parsley and lemon

    Once the mussels are cooked, remove the pot from heat and stir in the chopped parsley and lemon juice. Toss well to combine.

Serving

    Using a slotted spoon, transfer the mussels to serving bowls along with some of the broth. Garnish with the reserved parsley and serve with lemon wedges on the side.
