Prepare the Redfish

Rinse the redfish fillets under cold water and pat dry with paper towels.

Breading the Fish

In one bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together eggs and milk.

Coat the Fish

Dip each fillet first into the egg mixture, then into the flour mixture, ensuring an even coating.

Fry the Fish

In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated fillets and fry for 3-4 minutes on each side or until golden brown and cooked through.

Prepare the Bread

While the fish is frying, slice the Leidenheimer bread in half lengthwise.

Assemble the Po'Boy

Spread mayonnaise on both sides of the bread, then layer with fried redfish, lettuce, tomato slices, and pickles.
