Prepare the Filling
In a bowl, mix the pulled pork and smoked mac & cheese until well combined.

Assemble the Sandwich
Lay out 2 slices of Texas Toast. On each slice, place 1 slice of American cheese, then add half of the pulled pork and mac & cheese mixture, and top with another slice of American cheese. Place the remaining Texas Toast slices on top to form sandwiches.

Grill the Sandwich
Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, carefully place the sandwiches in the skillet. Cook for 4-5 minutes on one side until golden brown, then flip and add the remaining butter. Cook for an additional 4-5 minutes until the other side is golden and the cheese is melted.

Serve
Remove the sandwiches from the skillet, let them cool for a minute, then slice in half and serve with your favorite side dish.
