Prepare the Pasta
Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
Add Cheese and Seasonings
Reduce heat to low, and add the cheddar and gouda cheeses to the sauce, stirring until melted and smooth. Stir in the smoked paprika, garlic powder, onion powder, salt, and black pepper.
Combine Pasta and Sauce
Fold the cooked macaroni into the cheese sauce until well coated. Transfer to a greased baking dish.
Prepare Chipotle Bacon Topping
In a skillet, cook chopped bacon until crispy. Remove bacon and drain on paper towels. In the same skillet, add 1 tsp of chipotle in adobo sauce and mix with the bacon.
Bake the Mac & Cheese
Top the macaroni and cheese with the chipotle bacon mixture. Optionally, sprinkle with extra cheese. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes until bubbly and golden on top.
