    Preparation

    Preheat your smoker to 250°F (120°C).

    Season the Chicken

    Pat the chicken dry with paper towels. Rub the entire chicken with olive oil and then season generously with smoked paprika, garlic powder, onion powder, salt, and black pepper.

    Prepare for Smoking

    Soak the applewood chips in water for at least 30 minutes before using. Drain and place the chips in the smoker box or directly on the coals.

    Smoking the Chicken

    Place the seasoned chicken, breast side up, on the smoker grate. Close the lid and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (75°C).

    Rest and Serve

    Once cooked, remove the chicken from the smoker and let it rest for 10-15 minutes before carving and serving.
