Preparation and Assembly

    Prepare the House Potatoes

    Boil the house potatoes until tender, then drain and let cool. Once cooled, dice into bite-sized pieces and sauté in a pan with olive oil, salt, and pepper until golden brown. Set aside.

    Poach the Eggs

    In a pot of simmering water, crack the eggs into a small bowl and gently slide them into the water. Poach the eggs for about 3-4 minutes for a runny yolk or longer for a firmer yolk. Remove with a slotted spoon and set aside.

    Prepare the Biscuit Base

    Slice the DV8 biscuits in half and warm them in the oven or on a skillet until slightly toasted.

    Assemble the Benny

    On each biscuit half, place a generous portion of smoked brisket or ham. Top with a poached egg and drizzle with hollandaise sauce. Sprinkle with smoked paprika.

    Serve

    Plate the assembled benny next to a serving of house potatoes. Enjoy!
