Prepare the Brisket
Rub the beef brisket with smoked paprika, garlic powder, onion powder, black pepper, and salt. Let it sit for at least 1 hour, preferably overnight.

Preheat the Smoker
Soak hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Brisket
Place the brisket in the smoker and add the soaked hickory wood chips. Smoke for about 1 to 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

Prepare the Sandwich
Slice the brisket against the grain into 1/4 inch thick slices. Toast the Kaiser buns on a grill. Assemble the sandwich with sliced brisket on the bun.

Serve the brisket sandwich with your choice of side.
