Prep the Oven and Bread
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter and set aside. Cut the stale bread into bite-sized pieces and place it in a large mixing bowl.

Make the Custard Mixture
In another bowl, whisk together the eggs, granulated sugar, brown sugar, milk, cream, vanilla extract, and salt until well combined.

Combine Bread and Custard
Pour the custard mixture over the bread pieces, ensuring all are well coated. Let it sit for about 15 minutes to allow the bread to soak up the custard.

Add Chocolate Chips
Fold in the chocolate chips into the mixture. Pour everything into the prepared baking dish.

Bake the Pudding
Bake in the preheated oven for 40-45 minutes, or until the top is golden and a knife inserted into the center comes out clean.

Prepare the Bourbon Caramel Glaze
While the bread pudding is baking, prepare the glaze. In a saucepan, combine 1 cup of brown sugar, 1/2 cup of heavy cream, and 1/4 cup of bourbon. Cook over medium heat until the mixture comes to a boil, then reduce heat and simmer for 5 minutes until thickened.

Serve
Once the bread pudding is done baking, let it cool for a few minutes. Drizzle the bourbon caramel glaze over each serving and optionally serve with a scoop of vanilla ice cream.
