Prepare the Steak

    Marinate the Steak

    In a bowl, combine the sirloin steak, olive oil, salt, and black pepper. Rub the marinade all over the steak to ensure it's well coated. Let it marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours.

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated steak on the grill. Grill for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Remove from heat and let it rest for 5-10 minutes before slicing.

    Chop the Onion

    While the steak is resting, finely chop the medium onion and set it aside in a bowl.

    Chop the Cilantro

    Rinse the cilantro under cold water, shake off excess water, and then roughly chop it. Combine with the chopped onion.

    Prepare the Lime

    Cut the lime in half and set it aside for serving.

Assemble the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until they are pliable and slightly toasted.

    Fill the Tacos

    Slice the rested steak into thin strips. Place a few pieces of steak onto each tortilla, followed by a generous amount of the onion and cilantro mixture.

    Serve

    Squeeze fresh lime juice over the tacos and serve immediately with any additional lime wedges on the side.
