Caramel Preparation

    Make the Caramel

    In a medium saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves, then stop stirring and allow the mixture to boil.

    Monitor Caramel Color

    Cook the mixture until it turns a deep amber color, about 10 minutes. Be careful not to burn it.

    Pour Caramel

    Immediately pour the caramel into a round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

    Blend Custard Ingredients

    In a blender, combine the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Blend until smooth.

    Pour Custard into Pan

    Carefully pour the custard mixture over the hardened caramel in the cake pan.

    Prepare for Baking

    Preheat your oven to 350°F (175°C). Place the cake pan in a larger baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the cake pan.

    Bake the Flan

    Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted into the center comes out clean.

    Cool and Refrigerate

    Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

    Serve

    To serve, run a knife around the edge of the flan to loosen it, then invert it onto a serving plate. The caramel will flow over the custard.
