Prepare Taco Filling

Cook the Meat
In a large skillet over medium heat, add your choice of ground beef, ground chicken, or ground pork. Cook until browned, breaking it apart with a wooden spoon, about 7-10 minutes.

Add Seasoning
Sprinkle the taco seasoning over the cooked meat and pour in the water. Stir to combine and bring to a simmer. Cook for an additional 5 minutes until the mixture thickens slightly.

Warm Corn Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable. Keep them warm in a clean kitchen towel while you prepare the rest.
Assemble Tacos

Fill and Top
Take a warm tortilla and add about 1/4 cup of the meat filling to the center. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and jalapeños and cilantro to taste.
