Prepare the Dough

Combine Ingredients
In a medium saucepan, combine 1 cup of water, 1 tablespoon of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once the mixture is boiling, remove it from the heat and add 1 cup of all-purpose flour. Stir quickly until the mixture forms a ball and pulls away from the sides of the pan.

Incorporate Eggs
Allow the dough to cool for a few minutes. Then, add 2 large eggs, one at a time, mixing thoroughly after each addition. Stir in 1 teaspoon of vanilla extract until the dough is smooth and well combined.
Fry the Churros

Heat Oil
In a deep frying pan, heat 4 cups of vegetable oil to 350°F (175°C). Use a candy thermometer for accuracy.

Pipe Dough
Transfer the dough into a piping bag fitted with a star tip. Once the oil is heated, carefully pipe 6-inch strips of dough into the hot oil, cutting them with scissors to release.

Fry Until Golden
Fry the churros for 2-3 minutes on each side, or until they are golden brown. Remove from the oil and drain on paper towels.
Coat with Cinnamon Sugar

Mix Coating
In a shallow bowl, mix 1 cup of granulated sugar with 2 tablespoons of ground cinnamon.
