For the Tortilla Chips

Prepare the Tortillas
Cut each corn tortilla into 6 equal wedges using a sharp knife or pizza cutter.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle immediately.

Fry the Chips
Carefully add a handful of tortilla wedges to the hot oil, being cautious not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt while still hot. Repeat the frying process with the remaining tortilla wedges.

Mix the Salsa
In a medium bowl, combine the chopped tomatoes, red onion, jalapeño, and chopped cilantro. Add lime juice and salt to the mixture.

Taste and Adjust
Stir the salsa well and taste. Adjust the seasoning if necessary by adding more salt or lime juice.

Chill and Serve
Let the salsa sit for at least 15 minutes to allow the flavors to meld. Serve the salsa in a bowl alongside the tortilla chips.
