Lobster Salad Preparation

Make the Lobster Salad

In a mixing bowl, combine the cooked lobster meat, mayonnaise, finely chopped celery, lemon juice, Dijon mustard, salt, black pepper, and chopped chives. Mix well until combined. Refrigerate until serving.

Cole Slaw Preparation

Prepare the Cole Slaw

In another bowl, mix together the shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until everything is well coated. Chill in the refrigerator for at least 30 minutes.

Fries Preparation

Make the Hand-Cut Fries

Peel and cut the russet potatoes into thick strips. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Sprinkle with salt.

Pickles Preparation

Prepare the House Made Pickles

In a saucepan, combine white vinegar, water, sugar, salt, and dill weed. Bring to a boil, then remove from heat. Pour over the sliced cucumbers in a jar. Let it sit at room temperature for 1-2 hours, then refrigerate for at least 24 hours before serving.

Assemble the Lobster Rolls

To serve, fill each New England-style roll with the lobster salad mixture. Serve the rolls alongside cole slaw, hand-cut fries, and house-made pickles.
