Chicken Sandwich Preparation

Grill the Chicken

Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest.

Prepare the Bread

Slice the ciabatta bread in half and toast until golden brown.

Assemble the Sandwich

On the bottom half of the ciabatta, layer the arugula, grilled chicken, matchstick apples, and brie cheese. Drizzle with hibiscus vinaigrette and top with the other half of the ciabatta.

Cut and Soak Potatoes

Cut the potatoes into matchstick fries and soak in cold water for at least 30 minutes.

Fry the Potatoes

Heat oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat dry. Fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Make the Pickles

Slice the cucumbers and place them in a jar. In a saucepan, combine white vinegar, sugar, salt, and dill. Bring to a simmer and stir until sugar dissolves. Pour over cucumbers in the jar and let cool. Refrigerate for at least 2 hours before serving.
