Prepare the Battering Mix
In a large bowl, combine the flour, cornmeal, salt, and black pepper. Gradually whisk in the beer until the batter is smooth.
Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).
Fry the Fish
Dip each fish fillet into the batter, allowing the excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Prepare the Fries
Soak the cut potatoes in water for at least 30 minutes and then drain. This helps to remove excess starch.
Fry the Potatoes
Heat the oil in a deep frying pan over medium-high heat. Add the fries in batches and fry until they are golden brown and crispy. Remove and drain on paper towels, then season with salt.

Assemble the Sandwich
On each bulky roll, place a piece of fried fish, followed by lettuce leaves, a slice of tomato, and a generous helping of house-made pickles. Top with the other half of the roll.
