Preheat the Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 0.5 teaspoons of baking soda, and 0.5 teaspoons of salt until well combined.

Cut in Butter
Using a pastry cutter or your fingers, cut in 0.5 cups of unsalted butter into the flour mixture until it resembles coarse crumbs.

Add Buttermilk
Stir in 3 tablespoons of buttermilk until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about 1-inch thick, then cut out biscuits using a biscuit cutter or a glass.

Bake the Biscuits
Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, add 1 lb of ground sausage. Cook until browned and fully cooked, breaking it up with a spatula as it cooks.

Make the Roux
Once the sausage is cooked, sprinkle 0.5 cups of all-purpose flour over the sausage and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.

Add Milk
Slowly pour in 2 cups of milk while stirring constantly to prevent lumps. Continue to stir until the gravy thickens, about 5-7 minutes.

Season the Gravy
Add 1 teaspoon of black pepper and salt to taste. Stir to combine well.
